First mules caught, in surprising level of details:

Well, whilst the body is still unmistakably Mk. VII, the wheelbase is visibly longer, and the rear overhang will also likely grow a bit, given how the bumper is shaped, makes sense given how the whole segment is growing in size; It also shows that rumors, the Ml. 8 might be a warmed up reskin like the Mk. VI was were wrong. Even if it will continue to ride on the MQB chassis, it will have an all new body (even though it might end up looking like a facelift anyway)

Inside, we can see digital instruments, and, rather interesting, no center Screen, but some hard buttons where the current model has it's infotainment, indicating that the infotainment is either going where the air vents are now (and those will be relocated very low like in the Touareg), or that it might get a Audi TT like "virtual cockpit only". The shifter also seems to come form the Touareg resp. high end Audis.

The tartan seats, 4 cylinder engine and IRS plus actual double exhaust make me think this might actually even be a GTI mule, or a higher spec version at least;

It's an early mule, so I wouldn't put much attention to some random interior parts it has.
It's supposed to ride on the reworked MQB (50 kg lighter) and as we can see it will be larger than the current model.

My bet on the screen layout: it'll be more in line with this:

It will be another case of "meet the new Golf, same as the old Golf" kind of engineering that VW does.

Insert my usual rant about too many screens, the Mk VIII really gets all of those.

Which model are the HVAC controls from? They're quite upscale and handsome.

Videos at the link; Looks like, well, a Golf; From these pics, it could even be a reskin of the currnet car, the greenhouse looks very similar, or at least staying very close to the Mk. 7;

Just when you think the Golf cannot get more homely, it does. That is simply terrible. VW needs a styling break that is as abrupt as the Rabbit/Golf 1 was over the Beetle. They should have abandoned the same-old-same-old long ago.

99% sure that's NOT it. It looks like it's just a modded current generation that's been lowered, etc. Video is wayyy too low of quality/too short to know one way or another. Also, why would it just be driving around completely undisguised? VW NEVER does that unless a reveal is imminent.

Well, the bumpers (and probably lights ) still have that look of body colored wrap over them, that is popular with VW camo, that looks undisguised at first but still hides details; The Skoda CUV prototype following around definitely gives the whole situation credibility
